The authors take as a referral the recent legislation on job safety and HACCP to propose a methodology of planning in buildings dedicated to food-industry .

The study analyze the repercussions due to the application of the new legislation in referral to the general criteria used for the building’s planning and more specifically on the internal organization and the dimension of the functional departments, and the choice of the building material and the definition of machinery and complementary brickwork.

The above methodology are espoused mostly in graphics to ensure a easiest reading and comprehension , it’s basically studied to fit agro industries needs ( wineries, oil mills, dairy ) but whit appropriate changes can be applied to any other food-industries

Gli autori prendono a riferimento le recenti normative sulla sicurezza del lavoro e sull'HACCP per proporre una metodologia di progettazione di strutture edilizie dedicate ad attività agroindustriali. A tal fine vengono individuate e definite le ripercussioni che le normative citate hanno sulla impostazione in generale dei criteri progettuali dei fabbricati, e più specificatamente sull'organizzazione interna, sul dimensionamento dei reparti funzionali, sulla scelta dei materiali, sulla definizione degli arredi e delle finiture complementari.

La metodologia di cui sopra, esposta soprattutto in forma grafica per una immediatezza di lettura e comprensione, è pensata essenzialmente per le industrie agrarie per eccellenza (impianti enologici, oleari e caseari) ma risulta applicabile, con gli opportuni adattamenti, a qualunque altra struttura produttiva agroindustriale.
